1 pound breakfast sausage (your choice: spicy or mild)

1 cup shredded sharp cheddar cheese

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 large egg

1/2 cup milk

Optional: Chopped chives or parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a mini muffin tin with cooking spray or paper liners.

    Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Break it into small pieces as it cooks. Drain any excess grease and set aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and onion powder until well combined.

        Combine Wet Ingredients: In another bowl, whisk together the egg and milk until smooth. Gradually add the cooked sausage and shredded cheddar cheese to the wet mixture, stirring until evenly distributed.

          Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients and gently fold until just combined. Be careful not to overmix; lumpy is okay!

            Fill the Muffin Tin: Using a spoon or small ice cream scoop, fill each muffin cup about 3/4 full with the mixture.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the bites are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Allow the breakfast bites to cool in the tin for 5 minutes before transferring to a wire rack. Serve warm, garnished with chopped chives or parsley if desired.
