1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound boneless, skinless chicken breasts, diced

4 cups chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

2 cups uncooked lasagna noodles, broken into pieces

1 cup heavy cream

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute, until fragrant.

    Cook the Chicken: Add the diced chicken to the pot. Season with salt, pepper, oregano, basil, and red pepper flakes. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.

      Add Broth and Noodles: Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the broken lasagna noodles and reduce the heat to a simmer. Cook until the noodles are tender, about 10-12 minutes.

        Make it Creamy: Stir in the heavy cream, ricotta, mozzarella, and Parmesan cheese until melted and well combined. Allow the soup to simmer for another 5 minutes. Adjust seasoning with salt and pepper to taste.
