  • ¼ tsp pink food‑grade glitter (optional)

Filling (Raspberry‑Rose Ganache)

  • 150 g fresh raspberries (or frozen, thawed)
  • 100 g white chocolate, finely chopped
  • 1 tbsp heavy cream
  • ½ tsp rose water
  • ¼ tsp fine sea salt

Instructions

Piping and Baking the Shells

  1. Fold the Dry Ingredients. Gently fold the sifted almond‑flour mixture into the meringue using a spatula. Stop once the batter flows like lava—over‑mixing will cause the shells to crack, while under‑mixing leads to flat macarons.
  2. Pipe the Circles. Transfer the batter to a pastry bag fitted with a ½‑inch round tip. Pipe uniform 1‑inch circles onto a parchment‑lined baking sheet, spacing them 1½ inches apart. Tap the tray firmly on the counter three times to release air bubbles.
  3. Rest the Shells. Allow the piped shells to sit at room temperature for 30‑45 minutes, or until a skin forms that no longer sticks to a fingertip. This “dry‑out” stage is essential for the formation of feet.
  4. Bake. Preheat the oven to 300°F (150°C). Bake the shells for 15‑18 minutes, rotating the tray halfway through. The tops should be firm to the touch, and the bottoms lightly golden. If the shells lift easily, they are done.
  5. Cool. Let the shells cool completely on the tray before removing them. This prevents tearing and makes handling easier for the next step.
