Piping and Baking the Shells

While the shells cool, combine raspberries, heavy cream, and sea salt in a small saucepan. Simmer gently for 5 minutes, then strain to remove seeds, yielding a smooth puree. Remove from heat, add the white chocolate, and stir until melted and glossy. Finally, whisk in rose water for the floral note. Transfer the ganache to a piping bag. Pipe a small dollop onto the flat side of one shell, then sandwich with its matching pair, pressing lightly to spread the filling evenly.
