Ingredients

  • 2 lbs lean ground beef
  • 4 Yukon Gold potatoes, cubed
  • 2 cans mixed vegetables
  • 1 can whole-kernel corn
  • 1 can cut green beans
  • 1 can diced tomatoes
  • 1 can Hunt's tomato sauce
  • 4 cups beef broth
  • 1 large diced onion
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp Ranch seasoning

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up into small pieces as it cooks.
  2. Once the beef is browned, add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  3. Transfer the beef mixture to a 6-quart Crockpot and add the cubed potatoes, mixed vegetables, whole-kernel corn, cut green beans, diced tomatoes, Hunt's tomato sauce, beef broth, Italian seasoning, and Ranch seasoning.
  4. Stir well to combine, then cover the Crockpot and cook on low for 8-10 hours or high for 4-6 hours.
  5. Alternatively, you can cook the soup on the stovetop: brown the beef and cook the onion and garlic in a large pot, then add the remaining ingredients and bring to a boil. Reduce the heat to low and simmer, covered, for 1-2 hours or until the potatoes are tender.
