- 1 lb raw jumbo shrimp, peeled and deveined
- 1.5 lbs baby red potatoes, cubed

- 1 diced yellow onion
- 3 cloves minced garlic
- 4 cups chicken broth
- 1 cup heavy cream
- 4 tbsp butter
- 2 tbsp Cajun seasoning
- Fresh parsley, chopped (optional)
Instructions

- Pour in the chicken broth and add the Cajun seasoning. Stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 15 minutes before serving, stir in the heavy cream and add the raw shrimp. Cook until the shrimp are pink and fully cooked.
- Why add the shrimp at the end? This ensures they stay tender and juicy, rather than becoming tough and overcooked. The brief cooking time is all they need to absorb the flavorful broth and heat through.
- Stir in the butter until melted and season with additional Cajun seasoning if desired.
