Searing the Chicken
- Heat the skillet. Place a large, oven‑safe skillet over medium‑high heat for 3 minutes. Add the tablespoon of olive oil and watch for a gentle shimmer—this is the sweet spot for a quick sear.
- Sear both sides. Lay the chicken breasts in the hot pan, leaving space between each piece. Cook undisturbed for 4 minutes until a golden crust forms. Flip and sear the other side for another 3‑4 minutes. A good sear locks in juices and creates the fond that will flavor the sauce.
- Remove and set aside. Transfer the chicken to a plate and keep warm. The pan now holds flavorful browned bits—don’t clean it; they’re essential for the next step.
Building the Lemon‑Garlic Glaze
- Sauté aromatics. Reduce heat to medium. Add minced garlic to the pan and stir for 30 seconds until fragrant, being careful not to let it brown.
- Deglaze with lemon. Pour in the lemon juice and zest, scraping the browned fond with a wooden spoon. The acidity will loosen the caramelized bits, infusing the sauce with depth.

Oven Finish & Final Touches
- Combine everything. Nestle the seared chicken back into the skillet, arranging the potatoes and tomatoes around it. Spoon half of the glaze over the top, ensuring each piece gets a coating.
