  • ¼ cup granulated sugar
  • 3 large egg yolks
  • 2 tablespoons unsalted butter, cut into pieces

Lemon Glaze

  • 1 ¼ cups powdered sugar, sifted
  • 2–3 tablespoons fresh lemon juice
  • Pinch of salt

Instructions

Incorporating Eggs and Lemon

  1. Add eggs one at a time. Beat each egg until fully incorporated before adding the next. This prevents curdling and ensures a smooth batter. After the eggs, fold in the lemon zest, which releases essential oils for a fragrant crumb.
  2. Combine dry ingredients. Whisk together cake flour, baking powder, and a pinch of salt. Gently fold the dry mixture into the wet ingredients, alternating with the buttermilk. Stop mixing when just combined; over‑mixing would develop gluten and make the cake dense.

Making the Lemon Curd

  1. Whisk together curd base. In a saucepan, combine fresh lemon juice, sugar, and egg yolks. Whisk continuously over medium‑low heat; the mixture should thicken without scrambling, about 5‑7 minutes.
  2. Finish with butter. Remove from heat and stir in butter pieces one at a time until the curd is glossy and smooth. Strain through a fine mesh to eliminate any curdled bits, then let cool to room temperature.
