Zucchini & Tomato Gratin with Fresh Basil

4 medium zucchinis, thinly sliced

4 medium tomatoes, thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 cup fresh basil leaves, chopped

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 cup extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/2 cup breadcrumbs

Optional: additional basil leaves for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large mixing bowl, combine the sliced zucchinis, tomatoes, and onions. Add the minced garlic, chopped basil, salt, black pepper, dried oregano, and 2 tablespoons of olive oil. Toss well to coat all the vegetables evenly.

      Layer the vegetables: In a greased 9x13 inch baking dish, arrange half of the zucchini mixture in an even layer. Then, layer half of the sliced tomatoes on top.

        Add cheese: Sprinkle half of the Parmesan cheese and half of the mozzarella cheese over the tomato layer.

          Repeat the layering process with the remaining zucchini mixture, tomatoes, and top with the remaining cheeses.

            In a small bowl, mix the breadcrumbs with the remaining olive oil and sprinkle this mixture over the top of the gratin for a crunchy finish.

              Bake in the preheated oven for about 35-40 minutes, or until the top is golden brown and the vegetables are tender.

                Remove from the oven and let it cool for about 5 minutes. Garnish with additional fresh basil leaves before serving.
