3 medium zucchinis

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg

1 tsp garlic powder

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin sheets (about 1/4 inch thick) using a mandoline or a sharp knife. Lay the zucchini strips on paper towels and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture.

    Prepare the Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, egg, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.

      Assemble the Roll-Ups: Pat the zucchini strips dry with another paper towel. Spread 2–3 tablespoons of the ricotta mixture at one end of each zucchini strip. Carefully roll up the strip with the filling inside and place it seam-side down in a greased baking dish.

        Add Marinara Sauce: Pour half of the marinara sauce over the zucchini roll-ups, ensuring they are well-coated. Sprinkle the remaining mozzarella cheese on top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10–15 minutes or until the cheese is bubbly and slightly golden.

            Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
