Zucchini Corn Parmesan Bites

2 medium zucchinis, grated

1 cup fresh or frozen corn kernels (thawed if frozen)

1 cup grated Parmesan cheese

1/2 cup all-purpose flour

2 large eggs

1/4 cup chopped fresh parsley (or basil)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

Prep the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture until relatively dry. This is key to getting crispy bites.

    Combine Ingredients: In a large mixing bowl, combine the grated zucchini, corn kernels, Parmesan cheese, flour, eggs, parsley, minced garlic, onion powder, salt, black pepper, and red pepper flakes, if using. Mix until well combined and a slightly thick batter forms.

      Form the Bites: Using your hands, scoop out portions of the mixture (about 2 tablespoons each) and shape them into small patties or bites.

        Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. Ensure the oil is hot but not smoking.

          Fry the Bites: Carefully add the zucchini bites to the skillet in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy. Adjust the heat as necessary to prevent burning.
