2 medium zucchinis, sliced into thin rounds

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup crumbled feta cheese

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 small onion, chopped

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh basil or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken pieces. Season with salt, pepper, dried oregano, and thyme. Sauté for about 5-7 minutes, until the chicken is cooked through and slightly golden. Remove from heat and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the sautéed chicken, zucchini slices, cherry tomatoes, and crumbled feta cheese. Gently toss everything together until combined.

          Transfer to a Baking Dish: Pour the entire mixture into a greased baking dish (about 9x13 inches). Spread everything out evenly.

            Add Breadcrumbs: If using, sprinkle the breadcrumbs evenly over the top for a crunchy texture.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the zucchini is tender and the top is golden brown.

                Garnish & Serve: Remove from the oven, let it cool for a few minutes, and then garnish with fresh basil or parsley if desired. Serve warm as a main dish or side.
