Zesty Italian Sausage and Pepper Bake

1 pound Italian sausage (mild or spicy, your choice)

2 red bell peppers, sliced into thin strips

2 yellow bell peppers, sliced into thin strips

1 large onion, thinly sliced

4 cloves garlic, minced

1 can (14 ounces) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust for spice level)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 cup shredded mozzarella cheese

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sausage: In a large skillet over medium heat, add the Italian sausage. Cook, breaking it apart with a spatula until browned and cooked through (about 5-7 minutes). Once cooked, remove from heat and drain excess fat if needed.

      Sauté Vegetables: In the same skillet, add olive oil and then toss in the sliced onions and bell peppers. Cook for about 5-7 minutes, until the vegetables soften. Add minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked sausage and sautéed vegetables. Add the diced tomatoes (with their juice), oregano, basil, red pepper flakes, salt, and pepper. Mix until well combined.

          Bake the Mixture: Transfer the sausage and vegetable mixture to a greased 9x13-inch baking dish. Spread it out evenly.
