2 cups leftover mashed potatoes

1/4 cup green onions, chopped

1 large egg

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

2-3 tablespoons olive oil (for frying)

Sour cream or Greek yogurt (for serving, optional)

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, diced jalapeños, and chopped green onions. Mix well until all ingredients are evenly distributed.

    Bind the Ingredients: Add the flour, egg, garlic powder, onion powder, salt, and pepper to the bowl. Stir until the mixture comes together into a cohesive dough. Adjust salt and pepper according to taste.

      Form the Cakes: Take small portions of the mixture (about 1/4 cup) and shape them into cakes or patties. Flatten them slightly to ensure even cooking. You should be able to form around 8 cakes.

        Heat the Oil: In a large skillet, heat the olive oil over medium heat. Make sure the oil is hot before adding the cakes.
