2 lbs fresh figs, stems removed and quartered

1 cup granulated sugar

1/4 cup honey

1/4 cup fresh lemon juice (about 2 large lemons)

Zest of 1 lemon

1 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup water (optional, depending on fig moisture)

1/2 teaspoon vanilla extract (optional)

Prepare the Figs: Rinse the figs under cold water and pat dry. Remove the stems and cut the figs into quarters.

    Mix Ingredients: In a large mixing bowl, combine the quartered figs, sugar, honey, lemon juice, lemon zest, cinnamon, and salt. If the figs are particularly dry, you can add water to help them break down during cooking.

      Macerate: Allow the mixture to sit for about 30 minutes. This will help to release the natural juices from the figs and dissolve the sugar.

        Cook the Jam: Transfer the fig mixture into a large saucepan over medium heat. Stir occasionally and bring to a gentle simmer. Once it starts bubbling, reduce the heat to low and let it simmer gently for 30-40 minutes until the figs have softened and the mixture has thickened. Keep stirring every 10 minutes to prevent sticking.

          Test Consistency: To test the consistency, drop a spoonful of the jam on a cold plate. Let it sit for a minute, then run your finger through the jam. If it holds its shape and doesn't run, it's ready! If not, continue simmering for another 5-10 minutes and test again.

            Add Vanilla (optional): If desired, stir in the vanilla extract right before removing from the heat for an added layer of flavor.

              Jar the Jam: Once the jam reaches your desired consistency, remove it from the heat and let it cool slightly. Pour the jam into sterilized jars while hot, leaving about 1/4 inch space at the top. Seal tightly with lids.
