Ingredients

1 lb boneless, skinless chicken breasts

1 medium onion, chopped

3 cloves garlic, minced

2 cans (15 oz each) white beans (like Great Northern or Cannellini), drained and rinsed

1 can (4 oz) diced green chiles

4 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp chili powder

1/4 tsp cayenne pepper (adjust to taste)

Salt and black pepper, to taste

1 cup corn kernels (fresh, frozen, or canned)

1 cup heavy cream (or coconut milk for a dairy-free version)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Shredded cheese (like Monterey Jack or Pepper Jack, optional for serving)

Instructions

Cook the Chicken: In a large pot over medium heat, add a splash of oil. Season the chicken breasts with salt and pepper, then cook for about 5–7 minutes on each side until browned and cooked through. Remove from the pot and shred the chicken once it's cool enough to handle.

Sauté the Aromatics: In the same pot, add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

Combine Ingredients: Add the drained white beans, diced green chiles, chicken broth, cumin, oregano, chili powder, cayenne pepper, and cooked chicken back to the pot. Stir well to combine.

Simmer: Bring the chili to a gentle simmer, reduce the heat to low, and let it cook for about 20-30 minutes, allowing the flavors to meld together.

Add Corn and Cream: Stir in the corn and heavy cream, and let the chili warm through for an additional 5-10 minutes. Adjust seasoning with salt, pepper, and lime juice to taste.

Serve: Ladle the chili into bowls and top with fresh cilantro, sliced jalapeños, and shredded cheese if desired. Enjoy with tortilla chips or cornbread on the side!
