1 cup fresh ricotta cheese

1/4 cup heavy cream

2 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract

1 tablespoon lemon juice

2 cups seedless grapes (red or a mix of red and green)

1 tablespoon olive oil

Sea salt, to taste

Fresh thyme leaves, for garnish (optional)

Instructions
 

Roast the Grapes: Preheat your oven to 400°F (200°C). In a baking dish, toss the grapes with olive oil and a pinch of sea salt. Roast them for about 20-25 minutes, or until they are soft and starting to caramelize. Remove from the oven and let cool slightly.

    Prepare the Ricotta Mixture: In a medium mixing bowl, combine the fresh ricotta cheese, heavy cream, honey, vanilla extract, and lemon juice. Use a hand mixer or a whisk to whip the ingredients together until smooth and creamy. Taste and adjust sweetness or acidity if needed.
