Ingredients

2 cups rolled oats

1 cup almond flour (or all-purpose flour)

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon nutmeg (optional)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted (or unsalted butter)

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or pecans) or raisins/dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking dish with parchment paper for easy removal.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, ground cinnamon, salt, and nutmeg. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth and combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, mixing until just combined. If you're adding nuts or dried fruits, fold them in at this stage.

Transfer to Baking Dish: Spoon the mixture into the prepared baking dish. Press it down firmly into an even layer using the back of a spatula or your hands.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and the center is set.

Cool and Slice: Remove the baking dish from the oven and let it cool for about 10-15 minutes. Use the parchment paper to lift the bars out of the dish and place them on a cutting board. Cut into squares or bars of your desired size.

Serve Warm: These bars are delicious served warm but can be stored in an airtight container at room temperature for up to a week.
