4 cups fresh corn kernels (or 2 cans of sweet corn, drained)

2 cups cooked chicken, shredded (preferably rotisserie)

3 cups chicken broth

1 cup heavy cream

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 cup diced potatoes for additional heartiness

Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, diced carrots, and celery, cooking for an additional 5-6 minutes until they begin to soften.

Alternatively, transfer half of the chowder to a countertop blender, blend until smooth, and stir back into the pot.
