1 cup pearl barley

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 medium red bell pepper, chopped

1 zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup diced tomatoes (canned or fresh)

6 cups vegetable broth

2 teaspoons dried thyme

1 teaspoon dried basil

Salt and pepper to taste

1 cup kale or spinach, chopped (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Barley: Rinse the pearl barley under cold water in a fine-mesh strainer until the water runs clear. Drain and set aside.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Remaining Veggies: Add the carrots, celery, red bell pepper, and zucchini to the pot. Sauté the mixture for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

        Incorporate Barley and Tomatoes: Stir in the rinsed pearl barley and diced tomatoes, mixing well to combine all ingredients.

          Pour in Broth and Season: Add the vegetable broth, dried thyme, dried basil, and season with salt and pepper to taste. Bring the soup to a boil.

            Simmer the Soup: Once boiling, reduce the heat to low and let the soup simmer, uncovered, for about 30-35 minutes, or until the barley is tender.

              Finalize with Greens: If using, stir in the chopped kale or spinach during the last 5 minutes of cooking. This will add a lovely color and nutritional boost.
