1/4 cup coconut oil (solid, not melted)

1/4 cup powdered sugar

1/2 teaspoon salt

1/2 cup almond milk (or any plant-based milk)

1 tablespoon instant yeast

For the Strawberry Filling:

1 cup fresh strawberries, hulled and sliced

2 tablespoons maple syrup (adjust based on sweetness preference)

1 teaspoon lemon juice

1 tablespoon cornstarch

For the Vegan Cream Cheese Filling:

1 cup vegan cream cheese

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon almond milk (or any plant-based milk)

For Garnish:

Powdered sugar for dusting

Fresh strawberries for decoration

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Mix well.

      - Add the solid coconut oil and rub it into the flour mixture with your fingers until it resembles coarse crumbs.

        - In a separate bowl, warm the almond milk slightly (around lukewarm) and dissolve the instant yeast in it. Let it sit for about 5 minutes until frothy.

          - Pour the yeast mixture into the flour mixture and knead gently until a soft, pliable dough forms. If too sticky, add a little more flour as needed.

            - Cover the dough with a kitchen towel and let it rise in a warm place for 1 hour, or until it has doubled in size.

              Make the Strawberry Filling:

                - In a saucepan over medium heat, combine the sliced strawberries, maple syrup, lemon juice, and cornstarch. Stir gently and cook for about 5-7 minutes until the strawberries soften and the mixture thickens slightly. Remove from heat and let cool.

                  Prepare the Vegan Cream Cheese Filling:

                    - In a mixing bowl, combine the vegan cream cheese, powdered sugar, vanilla extract, and almond milk. Mix until smooth and creamy. Set aside.

                      Assemble the Danishes:

                        - Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper.

                          - On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.

                            - Cut the dough into squares (about 4x4 inches each).

                              - Using a sharp knife, make diagonal cuts on each side of the squares, being careful not to cut through the center.

                                - Place a tablespoon of the vegan cream cheese filling in the center of each square, followed by a tablespoon of the strawberry filling.

                                  - Fold the ends of the square over the filling, alternating sides to create a braiding effect.

                                    Bake the Danishes:

                                      - Place the assembled danishes on the prepared baking tray and let them rest for an additional 15 minutes.

                                        - Bake in the preheated oven for 20-25 minutes, or until golden brown.

                                          Serve:

                                            - Allow the danishes to cool slightly on a wire rack. Dust with powdered sugar and garnish with fresh strawberries before serving.
