1 cup raw cashews (soaked in water for at least 4 hours or overnight)

2 cups uncooked elbow macaroni (or any pasta of your choice)

1 cup vegetable broth

1/4 cup nutritional yeast

1 tablespoon lemon juice

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon turmeric powder (for color)

Salt and black pepper to taste

1/2 cup canned coconut milk (optional for extra creaminess)

1/2 cup bread crumbs (for topping, optional)

Fresh parsley or chives for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Prepare the Cashew Sauce: In a blender or food processor, combine the soaked and drained cashews, vegetable broth, nutritional yeast, lemon juice, olive oil, garlic powder, onion powder, turmeric powder, and salt and pepper to taste. Blend until smooth and creamy. If you're using coconut milk, add it at this stage for extra creaminess.

      Combine Pasta and Sauce: In a large mixing bowl or the pot used for cooking the pasta, combine the drained macaroni and the cashew sauce. Stir until the pasta is evenly coated with the sauce.
