1 can (15 oz) chickpeas, drained and rinsed

1/4 cup vegan mayonnaise (or tahini for a lighter option)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup red onion, finely chopped

1/4 cup celery, finely chopped

1/4 cup cucumber, diced

1/4 cup red bell pepper, diced

Fresh parsley or dill, chopped (to taste)

Bread of your choice (whole grain, gluten-free, etc.)

Lettuce leaves and tomato slices for serving

Instructions
 

Mash the Chickpeas: In a large bowl, add the drained and rinsed chickpeas. Using a fork or potato masher, gently mash the chickpeas, leaving some chunks for texture (about 3/4 mashed).

    Mix the Dressing: In a separate small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth and well combined.

      Combine Ingredients: Pour the dressing over the mashed chickpeas. Add the finely chopped red onion, celery, cucumber, red bell pepper, and fresh parsley or dill. Stir everything gently until well combined.

        Taste and Adjust: Taste the chickpea mixture and adjust the seasoning if necessary. Add more lemon juice, salt, or pepper according to your preference.

          Assemble the Sandwich: Take two slices of your favorite bread and layer lettuce leaves on one slice. Scoop a generous amount of the chickpea salad onto the lettuce. Top with tomato slices and the other slice of bread.
