1 lb elbow macaroni

4 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes to form a roux. Gradually whisk in the whole milk, stirring constantly until the mixture thickens, about 5-7 minutes.

      Add the Cheeses: Remove the saucepan from the heat and stir in the Dijon mustard, garlic powder, onion powder, and smoked paprika. Gradually add the shredded cheddar, mozzarella, and half of the Parmesan cheese, stirring until melted and smooth. Season with salt and pepper to taste.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni and cheese sauce, mixing well to ensure all pasta is coated evenly.

          Prepare for Baking: Preheat the oven to 350°F (175°C). Transfer the mac & cheese mixture into a greased 9x13-inch baking dish.

            Make the Topping: In a small bowl, combine the panko breadcrumbs, remaining Parmesan cheese, and olive oil. Mix until the breadcrumbs are well coated. Sprinkle the breadcrumb mixture evenly over the mac & cheese.
