Ingredients

For the Brownie Layer:

1 cup unsalted butter (2 sticks)

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

½ teaspoon salt

1 cup semi-sweet chocolate chips

For the Mint Cream Layer:

1 cup powdered sugar

½ cup unsalted butter (1 stick), softened

2 tablespoons heavy cream

1 teaspoon peppermint extract

A few drops of green food coloring (optional)

For the Oreo Topping:

1 package of Mint Oreo cookies

1 cup semi-sweet chocolate chips (for melting and drizzling on top)

Instructions

Preheat your oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking dish with parchment paper, leaving an overhang for easy removal.

    Make the Brownie Layer:

      - In a medium saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and stir in the granulated sugar until well combined.

        - Allow the mixture to cool slightly before whisking in the eggs one at a time, followed by the vanilla extract.

          - In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually fold this dry mix into the butter-sugar mixture until just combined. Stir in the chocolate chips until evenly distributed.

            - Pour the brownie batter into the prepared baking dish, spreading it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.

              Prepare the Mint Cream Layer:

                - In a medium bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, heavy cream, and peppermint extract, mixing until smooth and fluffy. If desired, add green food coloring and mix until blended.

                  - Spread the mint cream evenly over the cooled brownie layer. Chill in the refrigerator for about 30 minutes, allowing the cream to firm up.

                    Add the Oreo Topping:

                      - Once the mint layer is set, chop the Mint Oreo cookies into quarters and sprinkle them evenly over the mint cream layer, pressing them gently to adhere.

                        Melt the Chocolate Drizzle:

                          - In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each until smooth. Once melted, drizzle the chocolate over the Mint Oreo topping.

Final Chill: Place the brownies back in the refrigerator for at least an hour to set the chocolate.

                              Slice and Serve:

                                - Once everything is set, use the parchment paper to lift the brownies out of the pan. Slice them into squares and serve chilled or at room temperature!
