300g fresh tortellini (cheese or meat-filled)

300g button mushrooms or cremini mushrooms, sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

250ml heavy cream

100ml vegetable or chicken broth

50g grated Parmesan cheese

1 tablespoon fresh parsley, chopped

1 teaspoon dried thyme

Salt and pepper, to taste

Freshly cracked black pepper, for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sliced mushrooms. Cook for an additional 5-7 minutes, stirring frequently, until the mushrooms are golden brown and have released their juices.
