2 cups rolled oats

1 cup raw pumpkin seeds

1/2 cup chopped pecans

1/2 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

2 teaspoons pumpkin spice blend

1/2 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Instructions
 

Preheat Oven: Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped pecans, shredded coconut, pumpkin spice blend, and salt. Stir well to ensure everything is evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir thoroughly until all the oats and nuts are evenly coated with the sticky mixture.

          Spread Mixture: Transfer the granola mixture onto the prepared baking sheet and spread it out into an even layer. Use a spatula to gently press down on the mixture to form clusters.

            Bake: Bake in the preheated oven for about 25-30 minutes, or until the granola is golden brown. Halfway through baking, stir the mixture gently to ensure even cooking, but be careful to maintain some clumps.

              Add Dried Fruit: Once the granola is done baking, remove it from the oven and let it cool completely on the baking sheet. After it’s cooled, stir in the dried cranberries or raisins if using.

                Store: Once cooled, break into clusters and store in an airtight container at room temperature for up to two weeks.
