1 cup granulated sugar

½ cup packed brown sugar

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon pure vanilla extract

½ cup plain Greek yogurt or sour cream

¾ cup chopped nuts (walnuts or pecans, optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easier removal.

    Combine Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.

      Mix Sugars and Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and pumpkin puree. Mix well using an electric mixer or a whisk until fully combined.

        Incorporate Wet Ingredients: Add the vegetable oil, eggs, and vanilla extract to the pumpkin mixture. Mix until smooth and creamy.

          Add Yogurt/Sour Cream: Stir in the Greek yogurt or sour cream until fully incorporated. This ingredient is key for that super moist texture!
