Ingredients

For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup vegetable oil

4 large eggs

3 cups finely grated carrots (about 6 medium carrots)

1 cup crushed pineapple, drained

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

1 teaspoon pure vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon (optional, for a zesty twist)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, and vanilla extract. Add the grated carrots and crushed pineapple, mixing until everything is well incorporated.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix. If using, fold in the walnuts and raisins at this point.

Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Frosting: While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing on a low speed until combined. Add the vanilla extract, lemon zest (if using), and a pinch of salt. Beat until light and fluffy.

Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake evenly.

Decorate: Optionally, decorate the top with additional walnuts, shredded coconut, or even edible flowers for a beautiful presentation.

Serve: Slice and enjoy your Ultimate Carrot Cake! This cake is perfect for any celebration or simply to enjoy with a cup of coffee.
