4 cups all-purpose flour

1 packet (2 1/4 teaspoons) instant yeast

1 teaspoon sugar

2 teaspoons kosher salt

1 ½ cups warm water (about 110°F)

1/4 cup baking soda (for boiling)

1 large egg (for egg wash)

Coarse sea salt (for topping)

Optional: melted butter (for brushing after baking)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until foamy.

      - Stir in the flour and kosher salt. Mix until a shaggy dough begins to form.

        - Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic.

          First Rise:

            - Place the kneaded dough in a lightly oiled bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.

              Shape the Pretzels:

                - Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, about 24 inches long.

                  - Shape each rope into a pretzel by forming a U shape, crossing the ends over each other, and then twisting them down towards the base before pressing the ends firmly to secure.

                    Boil the Pretzels:

                      - Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

                        - In a large pot, bring 10 cups of water to a boil and add the baking soda carefully.

                          - Working in batches, boil each pretzel for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.

                            Egg Wash:

                              - In a small bowl, whisk the egg and brush it over each pretzel. This will give them a beautiful, shiny finish.

                                - Sprinkle coarse sea salt on top of each pretzel.

                                  Bake:

                                    - Bake the pretzels in the preheated oven for 12-15 minutes, until golden brown and crispy on the outside.

                                      Finishing Touch:
