1 1/2 cups warm water (110°F/45°C)

1/4 cup granulated sugar

1 tsp salt

1/4 cup baking soda

1 large egg (for egg wash)

Activate Yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy. This ensures that your yeast is activated.

    Make Dough: Add flour and salt to the yeast mixture. Mix using a wooden spoon or your hands until a shaggy dough forms.

      Knead Dough: Transfer the dough to a floured surface and knead for 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour, but be cautious not to overdo it.

        First Rise: Place the kneaded dough in a lightly greased bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          Prepare Baking Soda Solution: While the dough is rising, preheat your oven to 450°F (232°C). In a large pot, bring 10 cups of water and the baking soda to a boil.

            Shape Pretzels: Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 20 inches long) and then shape it into a pretzel form by creating a loop and twisting the ends before securing them to the bottom.
