Ingredients

1 can (5 oz) of high-quality tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 small celery stalk, finely chopped

2 tablespoons red onion, finely chopped

Salt and pepper to taste

4 slices of sourdough or whole grain bread

4 slices of sharp cheddar cheese

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, chopped celery, and red onion. Mix well until all ingredients are blended. Season with salt and pepper according to your taste. Set aside.

Assemble the Sandwiches: Lay out the bread slices on a clean surface. On two of the slices, evenly spread a generous portion of the tuna mixture. Top the tuna mixture with a slice of cheddar cheese, then place the remaining bread slices on top to create a sandwich.

Butter the Bread: Spread about 1 tablespoon of butter on the outside of each sandwich. This will help achieve a perfectly golden and crisp exterior.

Grill the Sandwiches: Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 4-5 minutes on one side, or until golden brown. Carefully flip the sandwiches and continue grilling for another 4-5 minutes, adding more butter to the skillet as needed.

Check for Melting: Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet. Let them cool for a minute before slicing in half.

Garnish and Serve: Plate the tuna melts and sprinkle with freshly chopped parsley for an added touch of flavor and color. Serve immediately with your choice of side, like a pickle or a side salad.
