3 to 4 lbs chuck roast

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried thyme

½ teaspoon dried rosemary

4 cups beef broth

1 onion, chopped

4 carrots, peeled and cut into chunks

3 celery stalks, chopped

4 cloves garlic, minced

2 tablespoons Worcestershire sauce

2 bay leaves

1 tablespoon cornstarch (optional for gravy)

2 tablespoons water (optional for gravy)

Prepare the Roast: Start by patting the chuck roast dry with paper towels. Season generously with salt, black pepper, garlic powder, onion powder, thyme, and rosemary on all sides.

    Sear the Roast: In a large skillet over medium-high heat, add olive oil. Once hot, sear the roast for about 3-4 minutes on each side until golden brown. This step enhances flavor but can be skipped if you're short on time.

      Add to Slow Cooker: Transfer the seared roast to the slow cooker. Add the chopped onion, carrots, celery, and minced garlic around the roast.

        Pour in the Liquid: In a bowl, combine the beef broth and Worcestershire sauce. Pour this mixture into the slow cooker, ensuring the vegetables are immersed but the roast remains mostly above the liquid. Add the bay leaves for additional flavor.

          Slow Cook: Cover the slow cooker and set it on low heat for about 8 hours or on high for about 4-5 hours. The roast should be exceptionally tender and easy to pull apart when done.

            Adjust for Gravy (Optional): If you prefer a thicker gravy, combine cornstarch and water in a small bowl to create a slurry.
