8 oz lasagna noodles, broken into pieces

1 lb ground beef or Italian sausage (or a mix)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 tbsp tomato paste

2 tsp Italian seasoning

1 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

2 cups fresh spinach (or kale)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

Brown the Meat: In a large pot or Dutch oven, over medium heat, add the ground beef or sausage. Cook until browned, breaking it into small pieces with a spoon. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion to the pot and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Build the Soup Base: Add the crushed tomatoes, chicken or vegetable broth, tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring the mixture to a gentle boil.

        Cook the Noodles: Once boiling, stir in the broken lasagna noodles. Reduce the heat to low and simmer for about 15 minutes, stirring occasionally, until noodles are tender.

          Add Greens: Stir in the fresh spinach (or kale) and cook for another 2-3 minutes until wilted.

            Prepare the Cheese Mixture: In a small bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well blended.
