1 ½ cups all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

½ teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar, left to curdle for 5 minutes)

1 large egg

3 tablespoons unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

Cooking spray or additional butter for the skillet

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Make a well in the center of the dry ingredients, and pour the wet mixture into it. Gently stir with a spatula until just combined. Be careful not to overmix; a few lumps are fine!

        Prepare the Skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.

          Cook the Pancakes: Using a ¼ cup measuring cup, pour the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip carefully and cook until the other side is golden brown, about another 2 minutes.

            Serve Warm: Place the cooked pancakes on a plate and keep them warm in a low oven (200°F/90°C) while you repeat the process with the remaining batter.
