Ingredients

1 ½ cups pecan halves

1 cup light corn syrup

1 cup brown sugar, packed

1 teaspoon vanilla extract

¼ cup unsalted butter, melted

3 large eggs

¼ teaspoon salt

1 unbaked 9-inch pie crust (store-bought or homemade)

Optional: Whipped cream or vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Pie Crust: If using a homemade pie crust, roll out the dough and fit it into a 9-inch pie plate. Trim the edges and pierce the bottom with a fork to prevent bubbling. If using a store-bought crust, simply place it in the pie plate.

Toast the Pecans: Spread the pecan halves on a baking sheet and toast them in the oven for about 7-10 minutes until fragrant. Keep an eye on them to avoid burning.

Make the Filling: In a large mixing bowl, whisk together the light corn syrup, brown sugar, vanilla extract, melted butter, eggs, and salt until the mixture is smooth and well combined.

Combine: Gently fold the toasted pecans into the filling mixture.

Pour into the Crust: Pour the pecan filling into the prepared pie crust, ensuring the pecans are evenly distributed.

Bake: Bake in the preheated oven for 60-70 minutes or until the filling is set and the top is golden brown. The edges may puff slightly; that's normal.

Cool: Once baked, remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours. This will help the filling to firm up.

Serve: Slice and serve with whipped cream or a scoop of vanilla ice cream, if desired.
