2 pounds Yukon Gold potatoes, scrubbed and cut into chunks

1/4 cup olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

3 cloves garlic, minced

Zest of 1 lemon

Optional: 1/4 cup grated Parmesan cheese (for extra flavor)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil. Cook for about 10-15 minutes, or until just tender but not falling apart. Drain well and let them steam in the pot for a minute.

      Rough Up the Potatoes: Shake the pot gently to rough up the edges of the potatoes; this will help create that crispy texture on the outside.

        Seasoning Mixture: In a small bowl, mix together the olive oil, sea salt, black pepper, rosemary, thyme, garlic, and lemon zest. If using, add the grated Parmesan cheese for an extra crispy, cheesy flavor.

          Toss the Potatoes: Transfer the drained potatoes to a large mixing bowl. Pour the seasoning mixture over the potatoes and toss gently until they are well coated.
