1 pound ground beef (or turkey for a leaner option)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

2 cups beef or vegetable broth

2 tablespoons chili powder (adjust to taste)

1 teaspoon cumin

1 teaspoon paprika (smoked for extra flavor)

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1 tablespoon olive oil

1 bell pepper, diced (any color)

1 teaspoon sugar (to balance acidity)

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions
 

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for about 5 minutes until they start to soften. Add minced garlic and sauté for another 1-2 minutes until fragrant.

    Brown the Meat: Push the veggies to the side of the pot and add the ground beef. Cook until browned, breaking it up with a spoon, about 6-7 minutes. Drain any excess fat if necessary.
