1 tablespoon coconut oil

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

4 cups coconut milk

2 cups vegetable broth

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon brown sugar

1 medium bell pepper, sliced

1 cup snap peas

1 cup chopped carrots

1 cup mushrooms, sliced

1 block (14 oz) firm tofu, cubed

Juice of 1 lime

Fresh basil and cilantro for garnish

Salt and pepper to taste

Sauté Aromatics: In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add Red Curry Paste: Mix in the red curry paste, stirring continuously for about 2 minutes until it is well incorporated and aromatic.

      Create the Broth: Slowly pour in the coconut milk and vegetable broth, stirring to combine. Add the soy sauce and brown sugar, then bring the mixture to a gentle simmer.

        Incorporate Veggies: Add the bell pepper, snap peas, carrots, and mushrooms to the simmering soup. Cook for approximately 8-10 minutes, or until the vegetables are tender but still vibrant.

          Tofu Time: Gently fold the cubed tofu into the soup, allowing it to heat through for another 5 minutes. Season with salt and pepper to taste.

            Finish with Lime: Remove the pot from heat and stir in the lime juice for a bright finishing touch.
