Tangy Mustard BBQ Chicken Sliders

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 cup mustard (yellow or Dijon)

1/2 cup apple cider vinegar

1/4 cup honey

2 tablespoons Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for heat)

12 slider buns

Pickles (for topping)

Coleslaw (for topping)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine mustard, apple cider vinegar, honey, Worcestershire sauce, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper if using. Mix well until thoroughly combined.

      - Add the chicken thighs to the marinade, making sure they are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or overnight for maximum flavor).

        Cook the Chicken:

          - Preheat your grill or a skillet over medium-high heat. If grilling, preheat until the grill grates are hot.

            - Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for about 5-7 minutes per side or until fully cooked through (internal temperature should reach 165°F / 74°C).

              - Once cooked, remove the chicken from the heat and let it rest for a few minutes before shredding.

                Prepare the Sliders:

                  - While the chicken rests, slice the slider buns in half. Toast them lightly on the grill or skillet if desired.

                    - Shred the grilled chicken with two forks and toss it with some of the reserved marinade for added flavor and moisture.

                      Assemble the Sliders:

                        - On the bottom half of each slider bun, place a generous amount of the tangy chicken. Top with pickles and a scoop of coleslaw for crunch and extra flavor.

                          - Place the top half of the bun on the assembled slider.
