Ingredients

1 package (8 oz) cream cheese, softened

1 cup granulated sugar

1/2 cup sour cream

Zest of 2 lemons

1/3 cup fresh lemon juice

1 box (15.25 oz) lemon cake mix

1 cup unsalted butter, melted

1 cup powdered sugar

1 cup water

1 teaspoon vanilla extract

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or non-stick spray.

Prepare the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth. Add the sour cream, lemon zest, lemon juice, and vanilla extract. Continue mixing until well combined and creamy.

Layer the Ingredients: Pour the cream cheese mixture into the greased baking dish, spreading it evenly.

Add the Cake Mix: Evenly sprinkle the dry lemon cake mix over the cream cheese layer, covering it completely.

Create the Buttery Crust: Drizzle the melted butter over the dry cake mix, ensuring all areas are moistened.

Prepare the Lemon Glaze: In a small saucepan, combine powdered sugar, water, and a pinch of salt. Heat over low heat until the sugar is dissolved, stirring occasionally. Once the mixture comes together, remove it from heat.

Bake the Cake: Pour the warm lemon glaze over the layered cake mixture in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the edges are bubbling.

Cool and Serve: Once baked, remove the cake from the oven and let it cool for about 15 minutes before serving. This cake is delicious warm or at room temperature.

Enjoy: Serve slices with additional lemon zest or a dollop of whipped cream for extra flair if desired!
