Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes with green chilies

2 cups beef or chicken broth

1 packet taco seasoning (about 1 oz)

1 tsp chili powder (optional, for extra heat)

½ tsp cumin

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños, tortilla chips

Instructions
 

Sauté the base: In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the meat: Add the ground beef or turkey to the pot. Cook until browned, breaking it up into small pieces with a spatula, approximately 5-7 minutes. Drain any excess fat if necessary.

      Combine ingredients: Stir in the taco seasoning, chili powder, cumin, and a pinch of salt and pepper. Mix until the meat is well-coated with the seasonings.

        Add the vegetables: Incorporate the black beans, kidney beans, corn, diced tomatoes, and broth into the pot. Stir everything together until combined.

          Simmer the soup: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-30 minutes, allowing the flavors to meld together. Stir occasionally.

            Taste and adjust: After simmering, taste the soup and adjust the seasonings as needed. If you wish for a thicker soup, you can let it simmer uncovered for an additional 10 minutes.

              Serve: Ladle the taco soup into bowls and top with your choice of shredded cheese, sour cream, chopped cilantro, sliced jalapeños, and tortilla chips for added crunch!
