Ingredients

1 lb ground beef

1 packet taco seasoning

1 cup cheddar cheese, shredded

1 cup nacho cheese sauce

4 large flour tortillas

1 cup cooked rice (preferably Spanish rice)

1 cup refried beans

1/2 cup diced tomatoes

1/4 cup sour cream (optional)

1/4 cup chopped green onions (for garnish)

1 tablespoon olive oil (for cooking)

Instructions

Cook the Beef: In a skillet over medium heat, add olive oil and ground beef. Cook for about 5-7 minutes until browned, breaking up any clumps. Drain excess fat.

Season the Beef: Add taco seasoning to the browned beef along with a splash of water. Stir to combine and let simmer for about 2-3 minutes until thickened.

Prepare Tortillas: Warm tortillas in a dry skillet or microwave to make them pliable.

Assemble the Burrito: Lay a tortilla flat and spread a layer of refried beans down the center, followed by a scoop of cooked rice, a generous portion of seasoned beef, diced tomatoes, and a drizzle of nacho cheese sauce.

Add Cheese: Sprinkle a handful of shredded cheddar cheese on top of the fillings.

Wrap the Burrito: Fold in the sides of the tortilla and then roll from the bottom up, securing the filling inside. Repeat with remaining tortillas.

Grill the Burritos (Optional): If you want a crispy exterior, place the wrapped burritos seam-side down back in the skillet over medium heat for 2-3 minutes on each side until golden brown.

Serve: Slice the burritos in half, drizzle extra nacho cheese on top, and garnish with chopped green onions and a dollop of sour cream if desired.
