2 cans young green jackfruit in brine or water (about 20 oz each)

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon black pepper

Salt, to taste

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 tablespoon maple syrup (optional, for added sweetness)

Burger buns or sliders for serving

Vegan coleslaw (optional, for topping)

Instructions
 

Prepare the Jackfruit: Drain the canned jackfruit and rinse under cold water. Remove the seeds and core pieces from the jackfruit if desired, then cut the jackfruit into manageable pieces.

    Cook the Jackfruit: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and cook for another minute until fragrant.

      Add Spices: Stir in the smoked paprika, ground cumin, chili powder, and black pepper. Cook for about 1 minute, allowing the spices to toast slightly.

        Simmer the Jackfruit: Add the prepared jackfruit to the skillet, mixing it well with the spiced onion and garlic. Pour in the BBQ sauce, apple cider vinegar, and optional maple syrup. Stir to combine, ensuring all jackfruit is coated in the sauce.

          Cook Slowly: Reduce the heat to low, cover the skillet, and let the jackfruit simmer for about 30 minutes. Stir occasionally, breaking apart the jackfruit pieces with a fork or spoon to create a pulled texture.

            Final Touches: After 30 minutes, remove the cover and let it cook for an additional 10 minutes. This will help to thicken the sauce. Taste and adjust seasoning, adding salt if necessary.
