Sweet Raspberry Oatmeal Bars

1 ½ cups rolled oats

½ cup all-purpose flour

½ cup brown sugar

½ teaspoon baking powder

¼ teaspoon salt

1 teaspoon vanilla extract

¼ cup coconut oil (melted)

¼ cup honey or maple syrup

1 cup fresh raspberries (or frozen, thawed and drained)

½ teaspoon cinnamon

Optional: ¼ cup chopped nuts or chocolate chips for extra texture

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, salt, and cinnamon. Stir until well blended.

      Prepare the Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until combined. The mixture should be crumbly; set aside about ½ cup for topping.

          Add Raspberries: Gently fold the raspberries into the oat mixture, being careful not to break them apart too much to keep whole berries in the bars.

            Assemble the Bars: Press the oat and raspberry mixture evenly into the bottom of the prepared baking pan. Sprinkle the reserved crumb topping evenly over the top.

              Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the top is set.

                Cool Down: Remove from the oven and let the bars cool in the pan for about 10 minutes. Then, use the parchment paper to lift the bars out of the pan and let them cool completely on a wire rack before cutting into squares.

                  Serve & Enjoy: Once cool, cut into squares or bars and enjoy as a sweet snack or breakfast treat! Store leftovers in an airtight container for up to a week.
