Ingredients
  

1 cup all-purpose flour

1/2 cup unsalted butter

1 cup water

1/4 cup granulated sugar

1/4 teaspoon salt

1 teaspoon vanilla extract

2 large eggs

1 cup granulated sugar (for coating)

2 teaspoons ground cinnamon

Vegetable oil (for frying)

Chocolate sauce (for dipping, optional)

Instructions
 

In a medium saucepan, combine the water, butter, sugar, and salt. Bring to a boil over medium heat, stirring occasionally until the butter has melted completely.

    Remove the saucepan from heat and stir in the flour until a dough forms. Return it to the heat and cook for another 1-2 minutes to dry out the dough slightly, stirring continuously.

      Transfer the dough to a mixing bowl and let it cool for a few minutes. Once slightly cooled, add the eggs one at a time, mixing well after each addition until fully incorporated and the dough is smooth.

        In a small bowl, combine the granulated sugar and cinnamon, then set aside.

          Heat vegetable oil in a deep skillet or fryer over medium heat until it reaches 350°F (175°C).

            Using a piping bag fitted with a star nozzle, pipe small strips of dough, about 2 inches long, directly into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side.

              Using a slotted spoon, remove the churro bites from the oil and drain on paper towels.

                While still warm, roll each churro bite in the cinnamon-sugar mixture until well coated.

                  Serve immediately with chocolate sauce on the side for dipping, if desired. Enjoy your delicious Sweet Mini Churro Bites!
