Ingredients

1 lb sweet Italian sausage, casings removed

1 cup diced yellow onion

1 cup diced bell peppers (red and green for color)

8 large eggs

2 cups milk (whole or 2% for creaminess)

2 cups frozen hash browns (thawed)

1 cup shredded sharp cheddar cheese

1/2 cup maple syrup (pure for the best flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a large 9x13-inch baking dish with cooking spray or butter.

Cook the Sausage: In a large skillet over medium heat, add the sweet Italian sausage. Cook until browned and crumbled, about 5-7 minutes. Remove excess fat if necessary, and set aside.

Sauté the Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for about 4-5 minutes until they are tender and fragrant. Mix with the cooked sausage and set aside.

Whisk the Eggs: In a large bowl, whisk together the eggs, milk, maple syrup, garlic powder, onion powder, salt, and pepper until well combined.

Layer the Casserole: In the prepared baking dish, spread the thawed hash browns in an even layer. Next, layer the sausage and vegetable mixture over the hash browns. Pour the egg and milk mixture evenly over the top.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the casserole, ensuring every bite gets a cheesy delight.

Bake: Cover the casserole with aluminum foil (to prevent over-browning) and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the eggs are set and the top is golden brown.

Let It Rest: Allow the casserole to cool for about 10 minutes before slicing. This helps it to firm up a bit for easier serving.

Garnish and Serve: Slice into squares, garnish with fresh parsley, and serve warm. Drizzle additional maple syrup if desired.
