2 racks of baby back ribs

1 tablespoon smoked paprika

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon black pepper

1 teaspoon salt

½ teaspoon cayenne pepper (adjust to taste)

For the Peach BBQ Sauce:

2 cups fresh or frozen peaches, pureed

1 cup ketchup

½ cup apple cider vinegar

½ cup brown sugar

2 tablespoons honey

1 tablespoon Worcestershire sauce

1 teaspoon mustard (preferably Dijon)

1 teaspoon crushed red pepper flakes (adjust to taste)

1 teaspoon ground coriander

Salt and pepper to taste

For Garnish:

Fresh peach slices

Chopped green onions or cilantro

Prepare the Ribs:

    - Preheat your oven to 300°F (150°C).

      - Remove the membrane from the back of the ribs for more tender results. Pat the ribs dry with paper towels.

        - In a small bowl, mix the smoked paprika, brown sugar, garlic powder, onion powder, ground cumin, black pepper, salt, and cayenne pepper.

          - Rub this spice mixture evenly over both sides of the ribs.

            Bake the Ribs:

              - Wrap each rack of ribs tightly in aluminum foil, placing them on a baking sheet. Bake in the preheated oven for 2.5 to 3 hours, until tender.

                Make the Peach BBQ Sauce:

                  - While the ribs are baking, combine the pureed peaches, ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, mustard, crushed red pepper flakes, and ground coriander in a saucepan over medium heat.
