1 cup fresh sweet corn kernels (about 2 ears of corn)

1 cup all-purpose flour

1 large egg

1/4 cup milk

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup finely chopped green onions

1/4 cup grated cheddar cheese

Oil for frying (canola or vegetable)

4 large eggs

4 slices of crispy bacon or cooked sausage patties (optional)

Sliced avocado and fresh arugula for topping

Hot sauce (optional)

Instructions
 

Make the Fritter Batter: In a mixing bowl, combine the sweet corn kernels, flour, egg, milk, baking powder, salt, black pepper, cayenne pepper, green onions, and cheddar cheese. Stir until just combined; the batter should be thick yet able to drop from a spoon.

    Fry the Fritters: Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, drop spoonfuls of the corn batter into the skillet, flattening them slightly with the back of a spoon. Cook for about 3-4 minutes on each side until they are golden brown and crispy. Transfer the fritters to a paper towel-lined plate to drain excess oil. Repeat until all the batter is used.

      Cook the Eggs: In the same skillet, add a little more oil if needed, and fry the eggs to your desired doneness—sunny side up or over easy work well for this sandwich.
