Sweet Corn & Bacon Pasta Bake

8 oz (225g) penne pasta

4 slices of bacon, chopped

1 cup sweet corn kernels (frozen or fresh)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon smoked paprika

½ teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

      Sauté the Bacon: In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. This will take about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

        Cook the Vegetables: In the same skillet, add the chopped onion and cook until translucent (about 3-4 minutes). Stir in the minced garlic and sauté for an additional minute.

          Combine Ingredients: In a mixing bowl, combine the cooked pasta, sweet corn, sautéed onions and garlic, crispy bacon, heavy cream, smoked paprika, black pepper, and salt. Mix well until everything is fully combined.

            Add Cheese: Stir in ¾ cup of the mozzarella cheese and half of the Parmesan cheese into the pasta mixture until well-distributed.

              Transfer to Bake Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish, spreading it evenly.

                Top with Cheese: Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly over the top of the pasta.

                  Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown on top.

                    Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley. Serve warm and enjoy your Sweet Corn & Bacon Pasta Bake!
