1 medium green cabbage, finely shredded

1 cup apple cider vinegar

1/2 cup granulated sugar

1/4 cup vegetable oil

1 onion, thinly sliced

2 cloves garlic, minced

1 teaspoon mustard seeds

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1/4 cup raisins (optional)

1/4 cup bell pepper, finely diced (for extra crunch)

Fresh parsley for garnish

Prepare the Cabbage: In a large bowl, toss the shredded cabbage with a generous pinch of salt. Let it sit for about 10 minutes to wilt slightly and release some moisture.

    Make the Dressing: In a saucepan over medium heat, combine the apple cider vinegar, granulated sugar, and vegetable oil. Stir well until the sugar is fully dissolved. Add the mustard seeds, garlic, and red pepper flakes, and bring the mixture to a gentle simmer. Remove from heat and let cool slightly.

      Sauté the Vegetables: In a separate skillet, heat a tablespoon of oil over medium heat. Add the sliced onion and sauté until it becomes translucent and begins to caramelize, about 5-7 minutes. If using bell pepper, add it to the skillet in the last 2 minutes of cooking.

        Combine Everything: Once the sautéed onion (and pepper if used) is ready, add it to the bowl with the cabbage. Pour in the prepared sweet and sour dressing over the cabbage mixture. Toss everything together until the cabbage is evenly coated.
